Hi,just came across you from another site! I do admire how you are trying to come up with ways to make good tasty meals within your budget! I have just writen about how my parents coped with feeding 8 of us and the kind of meals we had when I was growing up!This all came about because of the chicken campaign with Hugh Fernley Whitingstall.we had chicken once a month and this was classed as a treat!I too bring up my family on a low income due to a marriage break up and ill health but I think we eat better than those who just chuck crapp into their shopping baskets for the sake of convienience,with no thought to their families health!
just a few suggestions!when you have left over rice,add a bit of chopped onion with the peas or left over veg,mix together and warm through in a frying pan and then add 1or2 beaten eggs and move the mixture about until the egg is cooked its a cheaper version of egg fried rice!and its filling!
If you have a tin of corn beef use a couple of slices mixed with a little chopped tomato and onion for a sandwich if you don't have chutney! then use the rest of the corn beef to make a hash which is chunks of potatoes ,carrots, peas,onion or leeks,swede and a good handful of lentils with the corn beef in a large pan just cover with water and boil until potatoes are cooked and then add some gravy mix to thicken (or stock cube and cornflower is a good thickener),this is very filling and will last 2 or 3 days or freeze!
